- 250g AGM Pepperoni
- 2 boneless chicken thighs
- 1kg small shrimps, peeled
- 2 KG PASTA NOODLES
Marinade for chicken & shrimp:
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 Tbsp Chef Reggie’s Aromatic seasoning wine
- Salt
- Pepper
- Olive oil
Salad Components:- 2 onions, diced
- ½ cup sundried tomatoes
- 1 cucumber, sliced
- ½ kg cherry tomatoes, halved
- 1 cup asparagus, blanched, cut in 1 inch lengths
- Basil leaves
- 2 red/yellow bell pepper, diced
- 100g baby arugula
- 100g spinach
- PARMESAN CHEESE
Dressing:
- 4 Tbsp white wine vinegar
- 4 Tbsp honey *optional
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup olive oil
- 2 tsp parsley
- Oregano/ dried basil
- Salt
- Pepper
COOKING DIRECTIONS
- MARINADE CHICKEN THIGHS & SMALL SHRIMP FOR 30 MINUTES. CHOP CHICKEN INTO CUBES AND PAN FRY WITH OLIVE OIL AND PEPPERONI ON LOW HEAT. SET ASIDE
- COOK 2 kg cooked pasta FOR 8-12 MINUTES IN A POT OF BOILING WATER. DRAIN THE WATER AND drizzled with olive oil. TOSS ALL INGREDIENTS TOGETHER AND toP WITH greens and parmesan CHEESE!
